Fast & Easy Coleslaw…Mayo Free!

While working out at the gym and listening to Pandora recently, several commercials came on for a sub sandwich franchise. It advertised a pulled pork sandwich topped with coleslaw which led me to start thinking about and craving some! I knew I could not have pork today because we had just eaten it Sunday and besides, BBQ sauce is something that we just don’t generally eat. However, I thought that maybe I could at least figure something out for the slaw since we still had some leftover cabbage. We picked up some Wickles (that’s right low-sodium pickles that are sweet and spicy!) at the store on the way home, and I started mixing things together. Guess what? It contains no mayonnaise or sour cream! This dish makes one serving (if you eat a big lunch like I do) and is roughly 100 calories, 2g fat, 15 carbs, 10g sugar, and 170mg sodium. I served it over some shredded baked chicken which made for a nice and tangy lunch. I apologize for lack of pictures with this recipe, but I was so hungry and in a hurry that I only got one of the finished product.

MAYO-FREE FAST & EASY COLESLAW

Ingredients:

  • 1 carrot, shredded
  • 1 cup green cabbage, roughly chopped
  • 1/4 red onion, diced
  • 1 serving of low-sodium pickles*
  • 2-3 Tbs. low-sodium pickle juice
  • black pepper, to taste
  • 1/2 tsp. extra virgin olive oil

*Note: We like Wickles because they’re just 150mg of sodium per 5 pickles and roughly 30 cals. Most pickles range from 300-800 mg of sodium per serving. We also like this brand because they are sweet and spicy.

 

Directions:

  • This whole recipe is basically just a quick pickle! Roughly chop the cabbage and toss it into a bowl. Shred the carrot and dice the pickles and red onion. Toss them into the bowl and sprinkle with some black pepper. Take 2-3 Tbs. of your preferred pickle juice right from the jar and pour into the coleslaw mixture. Keep in mind that the sweet and spicy flavor goes the best in my opinion.Add in olive oil and mix well. 
  • Cover with plastic wrap or Press N Seal (what we generally use) and allow to “pickle” for about 20-35 minutes depending on preference.
  • You’re ready to eat!
